Every year at this time, I also watch the video that was made to remember someone I went to high school with because he was killed in action while trying to save someone else. It keeps me centered on what's important. Watch the clip below.
I did phone it in a little and bought a caramelized onion hummus and veggies because they're so good. But, here's what I prepared in a snap the night before.
First up, the appetizer my seven year old picked...
Super easy to do & quite tasty!
1 tub of whipped chive & onion cream cheese
1 package of smoked salmon (I used NY style smoked salmon)
Step 1: Peeled and cut the cucumber into moderately thick slices.
Step 2: Place about 1/2 of a tablespoonful of cream cheese on each cucumber slice. (Note: I love cream cheese so adjust to taste)
Step 3: Tear a little piece (about 2-3 inches) of the salmon and place on cream cheese.
Step 4: Enjoy!

A healthy alternative to a traditionally fat-laden dip
1 bag of frozen chopped spinach
1 single serving cup of plain fat free Greek Yogurt
About 1 cup of shaved Parmesan cheese
About 1/3 cup of mozzarella
2 cloves of garlic-minced
Dash of salt
Step 1: Heat the spinach in the microwave for about 5 minutes (depends on microwave). If there is excess water, drain out.
Step 2: Measure out cheeses. In a mixing bowl, combine the spinach and cheese.
Step 3: Add remaining ingredients to the mixing bowl, garnish with a few pieces of shaved cheese.
Step 4: Serve warm (or cold) with chips or veggies and enjoy!
